Quick Filling Dinner!

Hmmmmmm, I always get stumped when I start to think about what to cook for DINNER!! What do I need to dethaw, do I have to go to the store?? Sooo many questions that all depend on the first answer! Well, luckily for today I don't have to ask any of those questions! Why??? Because I'm making one of the EASIEST filling meals EVER!!! I can make it, cause the hubby who needs NO CARBS isn't going to be home, so I won't be teasing him. LOL! Now, you're asking what is this meal? Simple.....

MACARONI AND CHEESE WITH PEAS AND TUNA

The ingredients are as simple as the title, and that's why it's so great! You cook M&C and then as you are warming it up to melt the butter and such add a can of tuna and a can of Peas........and you are done!! Kids love IT, even the peas because it's all mixed in with the cheese and KIDS LOVE CHEESE!!

My Christmas Ham!

OMG! It was my first time hosting Christmas dinner, and I was sooo nervous! But I found this recipe for Sangria Ham and added a bit of my own touch and it turned out DELICIOUS! I couldn't have gotten better compliments! Honestly, if you cook it low enough and long enough it will turn out moist with an unforgettable taste! Plus, if you use the right ingredients you can make it taste light, people will eat more if it is light and not full of heavy ingredients. All you need for this is ham, sangria wine, pineapple juice, brown sugar.....and that's pretty much it!! It's definitely a recipe that everyone should try!!!

Christmas Dinner

Alright, so what is everyone doing for Christmas Dinner? Any traditions out there?

Well, we're not doing a tradition here, except for maybe starting a new one!! We're have ham, stuffing, potatoes and some veggies. But, the best part of the night will be the amazing Mimosa's that my great mother-in-law and I will be making!! We will have adult and PG versions! I strongly suggest making this for a gathering as they have plenty of fruit and healthy ingredients! Not too mention they are very easy to make!!! Few words...

Best way to NOT eat carbs? Keep only MEAT and SHRIMP in the house! I know that sounds basic, but I tell you as my husband is on a no carb diet......It is HARD to keep him happy when he sees bread, rolls, noodles, chips all the good stuff running around the house!

Interesting.....

Alright, so we all love quick meals that will feed the ENTIRE family fully. Well, my mom-in-law gave me an idea last night that I didn't even realize would work. Everyone is aware of Hamburger Helper, but how many really want to buy 2 boxes because they have a bunch of bottomless pits in their family? I know I hate it!! So, quickest solution, add noodles! I didn't think about this because everything is premeasured, but last night she did just that and added some noodles to the mix so that it would stretch further! Not a bad idea at all!

Then microwave a baked potato, microwave some veggies, and butter some bread! In the 30 min it took to cook HH, you WILL have a fulfilling meal on your hands for all those garbage disposals, AND maybe even some left overs(for that day you don't want to cook)! Great and Quick ideas!!

Who Doesn't Like Food?

Honestly, who out there doesn't like food?! Ok there may be a few, but not a whole lot. For my first blog I think I will tell you about my FAVORITE drink......That's right, it's coffee!! I LOVE IT! My husband says that if I don't get my coffee it's not going to be a good day! LOL. Truthfully though, the caffeine is good for heart, because my blood pressure drops too low. There are so many ways to enjoy it, it's neverending. Whether it's during the morning, middle of the day, or at night as you are trying to study late night.

I really love to cook and finding different ways to make family meals with little work....And as a busy mom, as easy and quick as possible. So, if you have any input or questions, feel free to ask! I always love to research and help out!!
